Alliums

Boasting some of the most fertile soils in the country, New York State’s Black Dirt region got its start as a glacial lake, and now produces extraordinary vegetables.  The region is perhaps most famous for its alliums – onions, shallots, and garlic.  The Black Dirt region’s soil boasts high sulfur levels and high organic content, lending the region’s onions and garlic their rich balance of spicy and sweet flavors and hardy texture.
